No brainer chicken curry


Here is one simple and easy chicken curry. Creamy. Thick. Not too spicy

3 cloves garlic
2 inches fresh ginger
1 onion
1 tsp turmeric
3/4 tsp chilli flakes
2 chicken breast
1 tomato
1 carrot
1 potato
1 Anlene plain yoghurt
coconut oil

  1. Blend garlic, ginger and onion in blender
  2. Heat coconut oil in pot. Saute the blended ingredients along with turmeric and chilli flakes for 2 to 3 minutes. Add garam masala and salt. Saute for another minute or so
  3. Stir in tomato, carrot and potato. Add in a little water. Cover the pot with a lid. Let it simmer gently on low fire for 15 to 20 minutes (till carrots and potatoes are soft)
  4. Add in chicken and yoghurt. Let it simmer for another 5 to 10 minutes (on low fire)
  5. Serve with rice or naan

I used to eat yoghurt everyday. Those were the days I have all the free time in this world to do what I want. This days, I am lucky enough if I gets to sleep for 6 hours. I am not complaining.

2017

Year 2017 coming to an end. It has been a busy year. I hardly have the time to sit and rest- or to sort out the sequel of events that take place over the past 358 days. In the beginning I was running like a headless chicken trying to cope with two babies. Things are more settle now. I am slowly getting the hang of it. I am hoping to clear off whatever backlogs I have and start NEW this new year.

It has been awhile

Time flies... how time flies. Ellie is 2. We have another one now. His name is Hugo. He is 6 months now. Wow... I know right.

Been rather busy for past few months. Nothing to do with Hugo. Not completely Hugohint fault. He was a good boy. A good boy until now... He is getting smarter this days. He has recently figured out the best way to gets attention is to cry. Cry out loud. If it's not loud enough, scream.

Things are a lot better this few days- coz I've enough of being busy. I have decided I will divide my time properly. Yes, we are talking bout time management here. Let's see if I can organise myself and things in my brain. GImme time. A week? May be two

Steamed Dom Ginger Chicken

It was a whole drumstick (minus the tight). I purposely cut the meat off the bone to make sure the chicken is perfectly cook. Since I have cut a portion of it, I decided to debone it. Easier for me to eat. 

Easy peasy recipe. Takes less than 10 minutes to prepare. Remove the chicken skin. Marinate with oyster sauce and white pepper. Add in bowl. Add a handful of goji berries. 3 tbsp DOM. 1 shiitake. A lil ginger. I like the julienne (thinly) version because I don't like biting a sliced ginger. You can add sliced version. Leave it in bowl till you are ready to cook. Steam the chicken in Tefal electric steamer- 30 minutes. 


You may want to add more DOM. I noticed the liquor evaporates. I end up adding a little hot water just so that I have more gravy to enjoy. The additional water does not affect the overall taste. 

When hubby is too busy to cook dinner for sick wife

Earlier today I asked him what we having for dinner. 
:What we having for dinner?
:Pizza
:You bake. I'm sick.
:Can you wait?
:No I can't. I'm hungry.
:I'm busy. Can you find something to snack first?

Poor me. I am hungry. Me snacking? I won't have the appetite for dinner if I munch of biscuits. I volunteered to bake the pizza instead- but instead of baking the pizza, I end up preparing something else. 

Not because I am hardworking but because I realised I've got quite a lot of vegetables sleeping in refrigerator. So what did I do?



Place them in oven. Bake for 15 minutes. Toast bread. Serve. Everything done under 30 minutes :)
