Newyork Cheesecake

Hubby claims they taste better than Secret Recipe's version. The recipe requires more work than no bake cheesecake but it definitely worth all the effort.

Recipe adapted from Joy of Baking
 For the crust
250g Chocolate Digestive Biscuits
50g sugar
125g melted butter

For the fillings
1 kg Original Philladelphia cream cheese

60g double cream
1 tsp vanilla extract
6 medium eggs
200g sugar
35g SR flour
Zest of 1 lemon

For the topping
240g sour cream
30g sugar
1 tsp vanilla extract

Begin with the crust. All you need to do is mix all ingredients in mixer. Blend till all ingredient mixed thoroughly. Spread in baking pan. Keep aside for later use. Next, mix all toppings ingredient till incorporated. Leave aside.

Preheat the oven to 175 degree. Beat the cream cheese till smooth. Add in vanilla extract, lemon zest, and double cream. Pour in the fillings to the baking pan. Bake the cake for 15 minutes.
