Blackcurrant Muffins

It's usually hubby's job to prepare breakfast for two. He must have thought he woke up in dreamland when he saw this freshly baked muffins first thing in the morning as he walked down for breakfast.

This muffins requires no effort. They taste yummy! Best to serve warm with a cup of coffee or tea

My recipe for Blackcurrant Muffins:
125g fresh milk
63g sunflower oil
1 medium size free range egg
63g sugar
250g flour
250g dried blackcurrant
1 tsp vanilla extract
1 tsp baking powder

Preheat oven to 175 degree. Prepare  the wet in a big bowl. Mix in the sugar and flour and baking powder into the wet ingredients. Use big stroke when stirring. Be careful not to overstir. Lastly add in dry blackcurrants. Scoop the mixture into muffin/ cupcake casing. Bake them for 20 minutes or till cook. Cool them on the rack for 30 minutes before serving.

What I like about this recipe is that every bites is filled with blackcurrants :)
