Hearty Roast Chicken

I rarely buy whole chicken. It's not possible for the both of us to feast on one whole chicken but the thought of baking one whole chicken is cool- just cos I've never baked or roast a whole chicken.

I've two options- to either roast the chicken with my oven or halogen oven. My initial plan was to bake the chicken using the oven but changed my mind cos I was feeling hungry. Pregnancy makes me hungry all the time.

Roasting a whole chicken with halogen oven is quite cool. I can see the chicken being roast. I can see the whole roasting process.



My simple recipe for roast chicken with halogen oven:

1 whole chicken (I used a large free range chicken)
Olive Oil
2 potatoes
2 tomatoes


Marinate:
Black Pepper
Salt
Garlic powder
Paprika
Rosemary

Clean the chicken. Placed the clean chicken on foil. Marinate the chicken with black pepper, salt, garlic powder, paprika and rosemary- preferably overnight. Place them in refrigerator. Remove the chicken from refrigerator 30 minutes before roasting. Prepare the potatoes and tomatoes. I like to cut the potatoes in cube (for easy cooking). Sprinkle the chicken with olive oil, black pepper and salt before wrapping them in foil. Place the chicken and rest of vegetables in the oven. Set your halogen oven at 200 for 60 minutes (20 minutes for the flat side and 40 minutes for the breast side). Remove the foil and increase the tempreature to 250 for the last 20 minutes (10 minutes for each side of the chicken).    

The end result was yummy. The chicken is very juicy and moist. The skin was crispy. Best thing is the halogen oven helps to skim all the oils from the chicken while roasting the chicken making this a healthy meal.

There is no way we can finish up the whole chicken. We kept the breast for spaghetti and fried rice.
