Peanut Butter Cookies

I made this a week prior to Chinese New Year. I was just testing my luck when I bake this batch of cookies. We don't have a proper oven for now till we move back to our place. I'm glad the cookies was a success. At least no ingredients wasted. Ingredients are expensive in KL.


Recipe:
150g self raising flour
75g icing sugar
80g sunflower oil
100g Steffi sugar free chunky peanut butter
Pinch of salt

Line tray with baking paper. Combine all ingredients. Scoop about a teaspoon of mixed ingredients on prepared tray. I used a fruit scope. Bake them in halogen oven for 10 minutes. Cool them on rack till cold. Store in airtight container.



I like the "melt in mouth" effect. Look like this can be a substitute to "kuih bangkit". Will try baking this batch with smooth version of peanut butter for hubby.
