Let's cook Indian food...

I'm tired. It is as if I had spent my day working hard. All I did for today is cooking. I cooked two dishes- nasi biryani and chicken varuval. Here is the end result for both my dishes:

Hubby claimed that the chicken varuval taste really good. It is similar to the one you can get from any Indian shop in Kuala Lumpur. The nasi biryani on other hand is not quite up to his taste yet. I don't think I can ever compete with mamak's version. Besides my version is the cut and paste version (as in I combine few different bloggers' recipe and modify them to suit my way of cooking).

Here is the recipe for today's meal:

Chicken Varuval
Ingredient A
600g Chicken Breast
Salt
Pepper

Ingredient B
4 red onions
10 clove garlic
5 inch ginger

Ingredient C
5 cardamons
2 star anise
A handful dry curry leaves
1 giant cinnamon stick (2 small one)

Ingredient D
4 tbsp curry powder for meat
4 tsp turmeric powder
4 tsp coarse chili powder
Pepper
Salt

Ingredient E
Dark soya paste 
  1. Cut the chicken into small cube. Marinate the chicken overnight. You may skip this step and go straight to cooking if you are starving for some home cook Indian foods :o).
  2. Blend Ingredient B.
  3. Stir fry Ingredient C till fragrant. Add in blended Ingredient B and stir fry for few minutes till all ingredient blends nicely.
  4. Add in the chicken and Ingredient D
  5. Stir fry till all ingredient blends well and cook
  6. Finally add in dark soya sauce.

Nasi Briyani
Ingredient A
3 cups of rice

Ingredient B
2 onions
5 clove garlic
2 inch ginger
1 tbsp tomato puree

Ingredient C
2 lemon grass
2 pandan leaves

Ingredient D
300ml chicken stock
400ml double cream

Ingredient E
1 tsp turmeric powder
1 cinnamon stick
2 star anise
5 cloves

Ingredient F
A handful raisins

Ingredient G
A handful cashew nuts
  1. Wash Ingredient A. Drain and set aside.
  2. Blend Ingredient B
  3. Pan fry Ingredient C and E till fragrant 
  4. Add in rice and raisin
  5. Transfer all ingredient into rice cooker (except for Ingredient G). Add in additional water if it's not sufficient. Let the rice cook.
  6. Fluff the briyani.
  7. Add in Ingredient G.
  8. Serve
