Three in One Meal for dinner

It is tough losing weight when you reached 30s. I gained more than 10kg during my 6 months of pregnancy. It has been six months now and I still have got a long way to go. I am hoping some light exercise and healthy meal will help till I conceive again. It won't be easy but at least I try to stay healthy. I don't want to pile on additional 15 - 20 kg on top of my current weight by the time I am pregnant again. That will be awful.

I try to have at least one with with a small portion of fish or chicken in every meal. I don't omit carbohydrates completely. I try to have a small portion of rice or potatoes. That way I will have a balance diet.

I have to admit I haven't been eating fish lately. One reason is because I do not know how to cook them. It is not nice serving my friend yucky fish meals. Being kiasu I try to substitute fish dishes with seafood. That way we will not be deprived of good protein.

It is hard to find good and easy fish recipes online or from recipe books. I have to say all my fish dishes are pretty boring. I hardly pan fry my fish or steam fish. The only time I boil my fish is when I do fish pies. I normally bake my fish. You can never go wrong baking fish dishes.


Here is my Three in One meal:
Broccoli with minced garlic
600g broccoli
1 tbsp minced garlic
Olive oil
Salt and pepper to taste

Bring a pot of water to boil. Dunk in broccoli for few minutes. Dish out.
Saute minced garlic with olive oil. Add in broccoli. Stir fry for few minutes. 
Season with salt and pepper.

Baked Smoked Haddock Fish 
2 smoked haddock
Olive Oil
Salt and Black pepper

Pre heat the oven to 220 degree. Sprinke smoked haddock with olive oil, salt and black pepper. Bake them for 10 minutes.

Sauted Chestnut Mushrooms with Abalone Sauce
Chestnut mushrooms
Olive oil
1 tbsp minced garlic
1 tbsp abalone sauce
1 tsp sugar
1 tsp soya sauce
Salt & Pepper

Saute the minced garlic with olive oil. Add in chestnut mushrooms. Saute for few minutes. Add in abalone sauce, sugar, soya sauce, salt and pepper. Let the mushroom cooked in the sauce for few minutes.
