Vegetarian Buttersquash Rice

Just yesterday mum reminded me its full moon today. I was quite determined to go on vegetarian for the day until I drank my cup of Chinese herbs I boiled with meat! Arghhh.... Anyway, it doesn't really matter. What is more important is observing the five precepts :o).

So what if I had meat based food for the day? That doesn't stop me from cooking something vegetarian for today. I am am glad my meat lover hubby enjoyed the rice.  He actually finished up the whole pot of rice!





Recipe:
Ingredient A
300g butter squash (cubed)
7 chinese mushrooms (soaked and sliced)

Ingredient B (minced)
1 onion
5 clove garlic
Ginger

Ingredient C
1 1/2 cup rice
1 tbsp vegetarian oyster sauce
1 tsp pepper
1/2 tsp dark sauce
Sesame oil

Ingredient D
3 cup vegetable stock
  1. Saute Ingredient B till the garlic and ginger goes almost brown
  2. Add Ingredient A. Stir fry for few minutes
  3. Next, add Ingredient C. Mix well
  4. Transfer and add remaining ingredients into rice cooker.
