Baileys Cupcake

Here is another cupcake/ muffin I've baked for this week. Love the texture. Love the fluffiness of this cupcake. Bet they make lovely cupcake if decorated with Baileys icing and some fondants. I can't wait to receive my pack of cake decoration tools I've bought from Taiwan. They should arrive anytime now.

Yes, this is my second serving for the day :oP

100g double cream
30g butter
125g dark brown sugar
2 large eggs
125g self raising flour
3/4 tsp baking powder
60g Baileys or any Irish Cream
1 tsp vanilla extract
  1. Preheat oven 200 degree
  2. Lightly cream the butter and cream till light and fluffy
  3. Beat in the brown sugar
  4. Whisk in the eggs till the ingredients combined
  5. Fold in flour, baking powder, Baileys and vanilla extract
  6. Divide the mixture and bake for 20 minutes
Try making some icing for the cupcake. You will not regret (eventhough they can be fattening). I've tried baking this with icing before in the past and they were lovely. Here is the recipe I used for the icing back then:

500g icing sugar
100g butter
50g Baileys

Beat the icing sugar and butter till they combine. Slowly add in the Baileys. Beat till the whole ingredient come out smooth and creamy. You can either choose to pipe or if you are just as lazy as I am, you can always spread the iing over the top with the back of a spoon.
