Coffee time with Mocha Muffins...

My poor breadmaker is now a white elephant at home. I've been baking for breakfast this days. The thing is they seems to be the best option because we tend to wake up on the dot (just in time for hubby to clean up and rush to work). It is not quite possible for hubby to pack butter, jam and bread to work. Don't you think it is awful for him to apply and eat at his work desk?

I am not so sure if I have any regrets for baking. I am kind of running out of idea what to bake. I can't be recycling the same cake or muffins or even brownies. My baking normally last us 2 or 4 days. I find it really hard to decide on the right recipe to bake every single time I need to bake. Just today, I was deciding if I want to bake a plain butter cake or lemon cake or even earl grey cupcakes. Funny thing is I ended up baking mocha muffins. 

They are easy to bake. All you need is to mix the wet and dry ingredients. You can find the recipe here. I will however include the recipe (I modified) here for my future references.

Ingredient A
2 large free range eggs
120 ml buttermilk (what I do is I mixed 120ml fresh milk with 1.5 tsp lemon juice)
60 ml espresso (I used espresso cup to determine the amount)
120ml corn oil

Ingredient B
225g self raising flour
25g cocoa powder
205g light brown sugar
1.5tsp baking powder
1 tsp baking soda
1/4 tsp salt
125g hazelnuts
120g chopped white chocolate

  1. Preheat oven 175 degree. 
  2. With a rubber spatula, fold the wet and dry ingredients until they are combined. Make sure you do not overmix your batter. 
  3. Fill the muffin cups.
  4. Bake for 20 minutes
Trust me, you will not regret baking this babies. They are soft and yummy. I bet you can finished half without realising.
