Easy gluten free almond coffee cake...

Hubby: Your cake looks short! It didn't rise.
Me: It's gluten free. I will buy a smaller baking pan to make it look taller for you.
Hubby: Tomorrow?
Me: May be but it's good idea to bake in a bigger pan. That way we eat lesser.
Hubby: *speechless*

I wish I have snapped a better picture of the cake. It was late in the evening when I baked this. Even my new energy saving white light do no justice to the picture quality. It all got to do with my poor photography skills. See, I finally admit reluctantly. *LOL*

I was dying to try a slice the moment I took it out from the oven. The only reason why I didn't butchered the cake was because I didn't want to look like a greedy pig in front of hubby :oP.

The cake is moist and airy. The only complain I have is that it was a little too sweet for my liking. I will try to reduce the amount of sugar when I bake this again. Also, I would definitely like to try to substitute granulated sugar with brown sugar.

Here is the recipe for almond coffee cake:
150g almond flour
3 large free range egg white
3 large free range egg yolk
113g sugar
1.5 tsp Nescafe Black Gold coffee granules
  1. Preheat oven 175 degree
  2. In a clean bowl beat egg white till it form a soft peak. Set aside.
  3. In a separate bowl, beat the egg yolks with sugar and coffee granules
  4. Add almond flour. Mix well.
  5. Fold the egg white into the almond mixture.
  6. Bake the cake for 35 to 40 minutes. 
You may decorate the cake by dusting it with icing sugar.
