Lemon Poppy Muffins

I can't remember where I got this recipe from. I've been baking this batch after batch for two years now. They make good picnic snacks :o).

120g butter
200g sugar
2 large free range eggs
250g yogurt
zest of one lemon
1 tsp vanilla extract (or lemon juice)
1 tbsp poppy seeds
1/2 tsp baking soda
260g self raising flour
  1. Preheat oven 200 degree
  2. Beat butter and sugar until fluffy
  3. Add in eggs
  4. Stir in yogurt, extracts, and lemon zest
  5. Fold in poppy seed, flour and baking soda
  6. Spoon into muffin cups
  7. Bake for 20  minutes (or till cook)
To add extra umph to lemon muffins, sprinkle lemon glaze on baked muffins. All you need is stir in the juice of one lemon to 60g icing sugar. Yummy!
