A Colourful and Sinfully Rich Vegetarian Fettuccine...




Fettuccine for 2
A handful of baby corn
A handful of sugar snap
1 red mini sweet pepper
1 yellow mini sweet pepper
5 chestnut mushrooms
A carrot (sliced thinly)
Zest of 2 lemon
Mozzarella cheese
Cheddar cheese
Garlic
Shallot
Salt and Black Pepper
  1. Cook pasta according to package direction
  2. Saute garlic and shallot with olive oil
  3. Add in all vegetables. Cook for a minute or two.
  4. Mix in the cooked fettuccine. Combine well
  5. Fold in mozzarella cheese and cheddar cheese
  6. Season with black pepper and salt (I omitted salt)
