Healthy Flourless & Sugar Free "Spiced Fruits & Nut Cookies"

I have to admit I don't fancy baking cookies or even biscuits. I can't really find time to enjoy the cookies. I just realised the cookies I bought can last me for weeks or even months. I would rather munch chocolates than cookies.

Lately however I thought it will be good for the two of us to substitute cakes or breads with oats or quinoa for breakfast. Hubby was totally against the idea of having those sticky porridge. He rather go without cakes or breads. He claimed his daily almond milk has done him a lot good and he has enough healthy diet from the daily juices and drinks. 

The whole idea of having oats or quinoa have to be postponed just because he didn't agree to my idea of a healthy breakfast. It didn't take me long to convince him to at least give oat a try- all thanks to M&S Essentials Collection of Cookies Recipe Book. 

What I like about this recipe is that it is easy, healthy and yummy. Of course it is different compared to the rich chocolate chip cookies but they are delicious for a healthy cookies.

500g mashed bananas
90g sunflower oil
1 tsp almond extract
1 large free range egg, beaten
1 tsp mixed spice
a pinch of salt
120 rolled oats (blended with Magic Bullet- flat blade)
130g rolled oats (or you can use 250g rolled oat)
75g sultanas
75g black currants
75g dates (chopped)
55g walnut
  1. Preheat oven to 180 degree
  2. Mix mashed bananas, oil, almond extract, egg, mixed spice and salt till all ingredient well mixed. Add in oats. Fold in fruits and walnuts
  3. Drop a tablespoon of mixture onto the baking sheet (I used the tablespoon provided by Panasonic Breadmaker).
  4. Bake for 20 minutes or until cookies are golden brown.
