Healthy fried rice with leftover chicken stews...

What do you do when you have leftover rice? In my case, I intentionally cooked two cups of rice a day before just so I have extra for fried rice. 

Unlike the usual fried rice I fried in the past, this is done with leftover chicken strips from chicken stewed, along with fresh long beans, carrots and two free range eggs. I also used some of the gravy to add flavour to the fried rice. To my surprise the fried rice tasted good. It's simple and easy. All done in less than 30 minutes :)

4 Garlics (diced)
3 Shallots (sliced thinly)
Long beans (sliced thinly)
Carrots (sliced thinly)
Leftover chicken stews
Gravy from chicken stews
Salt & Pepper
Sesame Oil
  1. Saute garlic and shallot with mixture of olive oil and butter
  2. Add carrots and long bean. Give it a stir or two before adding in the chicken
  3. Stir in the rice. Make sure all ingredients are well mixed. 
  4. Season with gravy, salt, and pepper
  5. Make a well in the middle of the pan. Pour in the eggs. Wait for 30 seconds and continue stir frying till eggs are cooked
  6. Drizzle with sesame seed oil

Tips: for smoky flavour ("wok hei"), fry on high heat. It's possible to create "wok hei" with induction cooker too :)
