A healthy bowl of vegetarian broccoli soup



I don't remember my brother liking soup when he was younger. It is surprising how he suddenly transformed into soup monster. I was cutting broccoli in kitchen when he asked me if they were for soup. Broccoli soup??? I have never made them before but I knew I can never go wrong with the below recipe:

Broccoli (chopped)
3 whole onions (chopped)
3 clove garlics (minced)
3.5 cups water 
1 tsp Marigold Swiss Vegetable Bouillon powder
Salt and Pepper to taste
  1. Saute onions and garlics with olive oil.
  2. Mix in the chopped broccoli. Stir fry a minute or two
  3. Add water and vegetable bouillon powder. Boil for 10 minutes
  4. Blend the vegetable soup with a blender till smooth.
  5. Pour the mixture back into the pot. 
  6. Season with salt and pepper.
For a richer version, add a tsp or more grated vintage cheese. I didn't because my parents are health conscious people. Besides, I wasn't in mood for anything rich.
