M&S Chicken in Fruity Curry Sauce + Stir fry vegetables for lunch

It's easy to prepare lunch when all I need to do is to dished up a big bowl of stir fry vegetables and heat up M&S chicken in fruity curry sauce. The whole cooking process only takes only 30 minutes. The end result:

It may be strange to the locals but it is definitely not a strange combination for us Malayians. It's quite a nice combination actually. The curry wasn't spicy at all. It is sweet and creamy (not something I like for curry but it was nice to eat with my stir fry vegetables). 

Here is my version of stir fry vegetables:

Recipe for two (main):
335 g brocolli (cut and blanched in hot water)
5 white mushrooms (sliced)
1 red pepper (cut to strips)
3 Thai shallots (shopped)
Black pepper
Olive oil
  1. Saute shallots with olive oil till brown
  2. Add  mushrooms, red pepper and brocolli in. Stir fry till all ingredients is cook. It's hard to judge how long the vegetable should be cook. My husband likes his vegetables soft- just like how a toothless grandma likes it. For that I normally leave the vegetables to cook extra long
  3. Season with salt and pepper
