Easy Slow Cooker Salmon Chowder

I don't know why but I am not in the mood for anything this whole week. Like it or not, I still have to prepare proper dinner for the family. Lucky for me I can still outsource part of the cooking job to my maid- the slow cooker.


Here is a simple and yummy version of salmon chowder prepared using Hamilton Beach Set 'n Forget slow cooker


Recipe
Adapted from Food Network Kitchen
Serves 2
(A)
2 cups hot boiling water
2 OXO chicken cubes, powdered
230 g potatoes, peeled and diced
2 small organic carrots, thinkly sliced
0.5 leek,diced
3 mini sweet pepper, diced
2 cloves garlic
1 stalk celery, thinly sliced
1 bay leaf
0.5 tsp dried parsley
0.25 tsp thyme

2 salmon fillet, skin removef and cut each fillet into 4 pieces
60 g double cream
Salt
Black Pepper
  1. Season the salmon with 0.5 tsp black pepper. Set aside  
  2. Place all ingredients A in slow cooker. Cover and cook on high for 3.5 hours
  3. Stir in the double cream in slow cooker.
  4. Place salmon into slow cooker. Cover and leave it to cook for another 30 minutes
  5.  Season with salt and pepper
 My dinner 4 hours later...
