Have you baked your Christmas cake?

This is my second year baking fruits pound cake. It was quite a challenge because I am still in the midst of experimenting with my brand new Kenwood Kmix stand mixer. At the end of the day I am glad the whole batter turns out the way I want.

I have to be honest I am not very happy with the overall look of the cake but it got nothing to do with the mixer. I stupidly lowered down the temperature and placed a tray a higher rack of oven half way through after slitting the cake centre. This hindered the uncook batter in the cake to penetrate through the slit. That explains why I don't have the beautiful mountain like peak in the centre of the pound cake. *SIGH*

I have no intention to cover the cake with marzipan or icing. I'll probably powder it with icing sugar when I serve this on Christmas day.
