My version of Quinoa Salad

Quinoa salad for early dinner today




Something rich yet healthy (not so sure if it's healthy version but something I deluded myself into believing it is healthy). Simple ingredients comprises of 1 avocado, 1 small carrot, 1 vine tomato, a handful of Asian mushrooms I bought from Waitrose sautéed with garlic and olive oil, lemon juice, fish sauce and black peppers. I am hoping this will keep me full till tomorrow morning. We will see...
