Blueberry Cake


Here's a batch of yummy blueberry cake I baked late last night. I rarely bake fresh fruits cake. I made an exception yesterday after buying 3 boxes of fresh juicy blueberries from M&S at mark down price. 


It's one of the best combination fresh fruits cake I've eaten. It's light, and not so sweet cake- perfect for my everyday breakfast. My picture doesn't justify how yummy the cake is. Do give this a try and you will know why I (hubby and I) like this cake


Recipe adapted from Taste Australia
Baked using 20cm square cake pan
167g Butter
172g vanilla sugar
3 large free range eggs
294g self raising flour, sieve twice
222g homemade yogurt
180g blueberries 

Preheat oven 180 degree
Beat butter and sugar till pale and creamy. 
Add in egg one at a time
Sit in half flour and half yogurt. Mix well with whisk. Repeat the other half
Spoon and smooth batter in prepared pan
Scatter blueberries on top of the batter
Bake for 40 minutes
Serve with icing sugar
