Healthy and Simple Aloo Gobi Masala (potato and cauliflower masala)

Here's a very simple Indian style potato and cauliflower masala I cooked for dinner. 

Ingredients needed:
2 onions
2 potatoes
1/2 small cauliflower
1 tsp ginger garlic paste
Dry curry leaves
1 tsp cumin
1/2 tsp fennel
1 tsp chilli powder
2 tsp coriander powder
A pinch of hing
1/2 tsp garam masala
1 cup water
1/2 lemon (juice)

Chop onions, cauliflowers and potatoes into small pieces. Heat up oil in pot. Add ginger paste, onions, fennel, cumin, coriander powder, chilli powder, and curry leaves in the pot. Sauté for about 5 minutes.

Add cauliflowers and potatoes in the pot. Stir fry for a minute or two. 

Add a cup of water, garam masala and hing. Cover and let it cook till vegetables get soft. Season with salt and lemon juice

Serve with basmati rice. A truly Malaysian style dinner. Salad with balsamic vinegar and truffle oil dressing, stir fry watercress with fermented cheese, and aloo gobi (potato and cauliflower) masala
