Healthy Aubergine and Tomato Salad

Here's a healthy aubergine salad for a change. I used almost no oil when grilling in halogen and pan frying with non stick pan. Yes, I used both halogen oven and non stick pan. I did this in rush. I didn't have the patience and time to get things done in halogen. 

1 aubergine, sliced
Piccolo tomatoes (the more the merrier), halved
Mint leaves, sliced thinly
Basil leaves, sliced thinly
2 cloves garlic, chopped
3 tbsp olive oil
1/2 tsp smoked paprika
Lemon juice
Parmigiano reggiano cheese
Himalaya rose salt
Cracked black pepper

Brush one side of aubergine with olive oil. Grill in halogen oven for 5 minutes (I used 150 degree). Alternatively pan fry or grill in griddle for about 5 minutes. Turn over and grill for another 2 minutes. Set aside. Sauté garlic till brown. Add paprika and drizzle with lemon juice. Season with salt and pepper. Mix tomatoes, aubergine and garlic sauce together. Garnished with mint, basil, cheese
