Another messy salad for dinner

Mummy says no snacks before dinner. She was right. We were both too full for dinner after feasting on a slice of dark chocolate baileys mud cake and a small slice of freshly baked blueberry cake (I'll find time to blog bout it tomorrow). Nevertheless I decided to make a bowl of salad just so we both have a little green intake for the day.


Nothing special- just shredded apples, shredded carrots, sugardrop tomatoes, and rocket leaves drizzled with generous amount of Spanish olive oil, balsamic vinegar and cracked himalaya rose salt. Carrots are in season now. They are crunchy, juicy and sweet at the same time. I should really consider juicing them for lunch. A nice alternative to coffee.
