Carrot Celery Soup

It has been awhile now since I last made a pot of soup. Here is an easy soup recipe one can dish up for quick lunch or dinner.

3 large size carrots, sliced
5 sticks celery, sliced
1/2 white cooking onion, sliced
1 cup water (more depending on the consistency you like)
Himalaya rose salt
Black pepper
Truffle oil (garnishing)
  1. Saute onions with a little olive oil
  2. Add in carrots and celery. Give it a stir or two before adding in water. Let it boil for 10 or 20 minutes. Leave it to cool
  3. Blend in blender. Transfer the soup into pan again. Cook on low heat.
  4. Season with cracked salt and pepper
  5. Drizzle with a little truffle oil or olive oil before serving (may omit)
Soup + Salad + Grilled salmon (lightly smoked). Yummy!
