Healthy One Pot Rocket Leaves, Carrots and Smoked Salmon Tagliatelle

Tagliatelle- a perfect one pot meal to cure my hungry and crying belly. An emergency meal I can cook and serve as fast as I cook a pack of instant noodle (and it is a lot healthier than instant noodle too). All I need to do is boil a pot of water. Cook the pasta and at the same time cutting and throwing whatever I want in Le Creuset pan. By the time my sauce or whatever I throw in is cooked, it is just about the right time for me to mix in the cooked pasta.


For this particular meal, all it takes is for me to sauté minced garlic till it gets a little brown. Add the thinly shredded carrots (grated with peeler). Give it a stir or two. Cover with a lid to soften the carrot a little. Add rocket leaves, cooked tagliatelle and smoked salmon. Season with cracked black peppers and Himalaya salt.

Key thing is always to have salad based greens such as spinach, watercress or even rocket leaves on hand. I always makes sure I have a big bag of spinach leaves or salad leaves, carrots, celery and potatoes whenever I buy my weekly grocery. You will be surprise how useful this few ingredients can be in time of needs for lazy cooking. Also, I always makes sure I have bags of raw scallops and raw prawns in freezer to satisfy my hubby's palate.
