Carrot Walnut Cake

One of the many cakes I attempted when I first embarked on baking adventure is the carrot walnut cake. It is not surprising why I picked to bake a carrot walnut cake. I was told it is the easiest cake to bake. Also, it is my way of impressing my nuts loving parents :)

It has been years now since I last bake this cake. I tried my luck "Google"-ing "Waitrose carrot walnut cake" and I've got a hit for the exact recipe 

A small slice is enough to satisfy my whole day cravings for sweet stuff.

Serves 8 when baked in 20 cm round cake pan 
Serves 10 to 12 when baked in 20 cm square pan
3 medium free range eggs
175 g brown sugar
175 g unflavoured oil/ melted butter
175 g walnut, crushed or chopped into smaller pieces
175 g carrots, grated
175 g raisins/ 2 riped medium size bananas, mashed
175 g flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
  1. Preheat oven to 170 Celsius
  2. Sift flour, baking powder, baking soda and salt twice. Set aside
  3. Beat eggs and sugar till the mixture gets thick and frothy. 
  4. Stir in the sifted flour with a spatula. Mix well.
  5. Add in the rest of the ingredients. 
  6. Bake for 1 hour - 1 hour 15 minutes (it takes me 1 hour)
For Cream Cheese Icing
75 g butter, soften
75 g cream cheese
150 g icing sugar
1 tsp vanilla extract
  1. Beat butter and cheese till it soft and light
  2. Mix in icing sugar and vanilla extract
  3. Spread the icing over the cake with icing spatula
