Vegetables Stew

Eating out for past few days means I have lots of vegetables untouch. I need to start cooking again. It took me sometime to decide what to cook. End up cooking this

It's simple. It's flavourful. It's healthy. It's filling. What more I want

2 carrots
1 stick celery
400 g potatoes
1 leek
1 garlic
1/2 tsp dry thyme
500 ml water + 2 tsp Marigold vegetable stock
  1. Wash, clean and cut vegetables. 
  2. Sauté the garlic and leek. 
  3. Add the vegetables. Cook the vegetables until soften.
  4. Pour in the stock. Add herbs. Simmer on low fire for 40 minutes
  5. Season with salt and pepper
